Wondering if there is a specific paint/stain/dye that can be used to successfully change the color of G-10 scales. I could easily paint them, but it would eventually flake off.

Any suggestions?

No.

The color is not a surface treatment. It is part of the material. The material is epoxy resin which is non-porus and impervious to most chemicals. Therefore, there is no way to dye it.

Furthermore, most common paints don't adhere well to epoxy resins or glass.

Light can penetrate both glass and epoxy resin, so it is possible to bleach the color out with strong light. But, the materials used to make G10 are specifically selected for their resistance to just such attack.

It is not possible to permanently change the color of G-10 because it is not porous.
