I picked up a Kershaw Chef's knife with wood handle the other day. Was wondering if anyone could provide some info, Mostly what steel and when were these made? I'm guessing that the R80-8 is the model number.

When I got the knife the edge was pretty mangled. My guess is that some one tried to chop up some bones or rocks with it. Spent a while this morning cleaning up the edge with my belt sander. Don't worry, I took it slow and didn't let the blade get hot. Used it a few minutes ago to slice up some tomatoes that I picked from the garden earlier this morning.

Does it actually say Kershaw on the blade? There were Kaicut made kitchen knives that had model numbers R80-x. They were made in Japan...had Rosewood handles and stainless blades (don't know exact type). I've seen used ones go for $15-20.

Hi MorrowJ, I added pics to my OP right before you responded. Yes, the blade says Kershaw Oregon USA on the left side and R80-8 Japan on the right side. Guess it could be a Kaicut knife. Thats why I asked and posted pics. :) Thanks!!

Looks like the same knife (Kaicut) to me. Maybe the same knife sold in the US under the Kershaw name?

Since you mentioned Kaicut I looked up the model with that brand and found some references to the knife on various shopping sites. Looks like you are correct. :) Now to figure out the steel type, not that it matters. ;) Thanks for the help!!

Good looking kitchen knife. Gotta love a kitchen blade that says "Oregon, USA" on it:thumbup:
