Can someone explain this?

I have a new Cutco fillet knife that was only sharp on one side. I mean only one side would dig into a finger nail. Only one side would shave hair. So Id take a few strokes on a ceramic rod and the opposite side would be sharp. I went back and forth like this for thirty minutes. I finally stropped it on a phone book and both sides turned out sharp. Is it unusual to have one side sharp like that?
 
Sounds like you had a burr on the blades edge...
You need to sharpen evenly to prevent this... One stroke per side.. back and forth..
Everyone of my plain edge knives have 2 Sharp sides..;)

Does it have a chisel grind for some reason?

Yes I know its a fillet knife.. But I have seen it

sounds like a burr to me, also.
 
Thank you all. Must have been a minute burr . I couldnt feel one. The blade is real thin. Thinner than other fillet knives I own.
 
When they are that small, trying to shave hair is the only way to tell (for me), unless you use a flashlight. You had a burr, then stropped it off. Good job!
