Can someone tell me some info on this knife?

I was wondering if anyone could tell me a year made, or what metal, or possible value of this knife. It appears to be a 1/16" thick, possibly a hair thicker than that. My dad use to be a Meat-Cutter and picked this up at a yard sale and has really been enjoying it.

Any information would be appreciated.
