Can you change the text in the header once you've started a thread? If yes, how? If no, why not? I think it would be helpful since it can change the meaning of the thread.

Yes, however you can't do it from the mobile app.
Go to "edit" then advanced.

I did that. Edit, Advanced and then where can you edit the header? I see how you can edit the text in the body of the ad, but where how do you edit the header?

Not sure about in the Groups, but in posts in regular threads do this. Edit post. Go Advanced. You will then have 3 boxes where you can place text. The lowest and the biggest box that takes up most of the page is where you edit the actual post. Above that is a one line box that says Title to the left of it. This is the one that you want. The highest box is the reason for editing and will show up at the bottom of your post next to the time you edited. Both the Title and Reason For Edit are optional.

I see it in a thread that I started in General Discussion, but I don't see it in the Knife Fan Group Forum which means you cannot edit the title in the Knife Fan Group Forum. I wonder why that is?

Thanks for your help.

The Knife Fan Group is one of the social media style additions to vBulletin which they added in recent years. Personally I think we could have done without them. They weren't totally integrated into the basic vBulletin software.

Does "Personally I think we could have done without them" in your comment mean that you think it's a bad idea to discuss Chinese knives? I don't understand what you are saying.

I think we could have done without the social media add-ons to vBulletin. The system is sluggish enough without adding functions we did fine without.

You don't seem to understand much that we say.

He Means: We could've done without the Fan groups, especially since they aren't integrated into the rest of the site.
As for discussing Chinese knives? discussing knives they actually design and make themselves is fine. Discussing the merits of the myriad of ripoff counterfeits they make is not fine other than to discuss how to not get ripped off by them.

One other thing, be careful of what you post in the "Groups" sections, they are subject to the rules just as much as the regular discussion boards are. If you post something and it's interpreted as facilitating in order to purchase (AKA) Deal Spotting, then it's not going to fly.
