Recommendation? Can you dye brown micarta to green?

I don't know if you can get green to show up on those. I have only done G10 so don't know if it works on phenolic resin. It's was easy, just used powdered rit dye in boiling water with a little vinegar. I used a wire to suspend it and that worked well.
 
Remember, the dye would only be close to the surface.
It will wear off, run off in use. Still Cool looking.

Green Sharpie marker would work too.
 
If having green-ish handles is really important to you, I'd say your best bet would be to buy the "cool gray" ones from the same source and dye them. They are a lot lighter than the brown, and a little cheaper. Of course the cool gray are G10 and not micarta. But you can dye g10, though I've never done it myself. There are instructional videos on youtube.

Trying to dye dark brown to green would likely result in green-ish black.

Or, you could have some custom made like JFK1110 suggested.

I claim no expertise whatsoever, but I have done a fair amount of Rit dyeing (FRN, micarta, G10, G-Shock resin), and the two constants that I have consistently experienced are that you can never go lighter and a general unpredictability. I've always been happy with the results, but I don't think they have ever turned out with the exact look I was envisioning when I started. My gut tells me though that you'll end up with just dark scales with maybe a greenish hue. I'm afraid that the only way to find out is to give it a shot and see where the project takes you. Beyond that, I'm not sure if there's any advice I can give that can really help, other than don't use your wife's favorite saucepan ;)
