Can you recommend me a Dremel?

I am looking for my first Dremel. I would like to use it to regrind some choils, recontour some handles, and polishing. What model would you recommend?

Will a simple two speed model be adequate?

The simplest one speed model is "adequate", variable speed is optimal but you should be able to get that stuff done with any Dremel brand rotary tool. Their material removal rates are relatively low though, so for regrinding/contouring expect to put in a little time.
 
i use my dremel 400 5-35 thousand rpm corded for everythin from finish work in tight spots and cutting metal in spots where an angle grinder is too clumsy
 
Get a variable speed. My first one (40+ years ago) was a single speed... 30K rpm. It just goes too fast for some jobs, so it isn't a high use tool for me. I still have it and still use it occasionally.

I picked up a Foredom at a garage sale with a foot pedal speed control. The variable speed and flex shaft make it very useful and I use it a lot.

Bottom line: at least get a variable speed. If in your budget, a flex shaft is nice to have too.

You want a variable speed (as others stated) and you need a corded one. In my experience the cordless ones are trash. Mines a good 15 years old and still running strong (forgot the model).
 
I've got a Ryobi. Just like a Dremel, except maybe less expensive. Uses same bits, variable speed.
