Can your EDC be too sharp?

I currently edc sere 2000,

the vg-10 loves a leather strop and just gets sharper as you go.

I feel like a "toothy" edge holds up better but it is too tempting to strop to hair popping edge.

At work I use a knife as much as any other tool ie; cardboard, rope, packages etc. Sheeple are always amazed at the cutting ability of a razor sharp edge. Good stuff!

I remember the first time I held a small diameter rubber hose between edge and thumb, nice clean cut, hose and thumb.

Any thoughts?

Depending on the job, you may want a toothier edge than a razor edge, as you mentioned. You also may want a more obtuse working edge if a precise cut is less important than heavy cutting on harsh materials. With really good steel, 30 degree inclusive edges are OK, but a short 40 degree final bevel lasts longer.
 
Sharp or toothy is important, but edge angle is, IMO, more important: a thin edge is easy to damage, whereas a slightly thicker edge holds up better.

My SERE 2K is scary sharp, but I try not to make the edge angle too acute.

Correct answer is NO and YES. Your solution is simple. Carry more than 1. Have 1 toothy and utility set and the other razor sharp for SD and fine light precise cutting.

I'd go with a Fallkniven U2. Small, simple, tough as hell and sharp... Do a search. These little things caused a lot of buzz for a while around here.

Something that i do on almost all my knives is raise the bevel.

ITry not to

get carried away, but slicing is important in most all the work I do. I use stones for most of my work, but have been successfully using a belt sander lately. I do usually end up with a fairly thin edge.

I, like a lot of you I suspect, find sitting down with a knife and stone therapeutic.

While you do have to be careful, a belt sander does a great job, then fine tune as needed.

I use a warthog 1000 grit diamond block and the leather strop that knives plus offers for 14.95 . . A drop or two of olive oil and a little roughing with a tooth brush puts the strop back to new shape.

Yeah, you need to sharpen it a little more. :p

BTW that SERE 2000 is one great knife, isn't it?
 
I traded for the Sere some time back,

It is a lot of knife for the money. I use it most every day many times.

Rolling eyes, kind of like cussing for no reason? Loses its meaning after a while.LOL, no sweat :D
