Canola, what steels work?

I am right now planning on sticking with 1084 and getting really used to it. For future reference I would like to know what all types of steel I can quench in canola. So far I have looked up and read 1084, and 5160, possibly O1 or 52100. Will all work with canola. From what I have read, in my future I want to make bushcraft knives with 52100. That's a long term goal though. What steels and at what temps can I quench in canola. I would really like to hammer out some larger items like axe, or tomahawk heads. Maybe with 5160 because of its toughness. Could I quench that in canola? It's pretty easy to get for me, and if it goes rancid I can easily get more.
 
Basically, avoid steels that require a super fast quench. None of the steels you list require that.
 
i use nothing but 1075 and most of the time i use canola oil when i quench. the steel will not care if the oil is rancid either.
