I here a lot about 1095 carbon steel which is used in the Old Timer, KaBar and others I guess. My question is what is the difference, if there is any, in the 1095 carbon and the carbon used in the Boker and other German knives? Thanks for any help.

I asked Boker, they said that they use 1095. As for the other German brands, I am not sure. Eye Brand, Bulldog, Buck Creek, and Indian Head all come from the same factory. And Kissing Crane puts out a great carbon steel, too. I think Henckels pocketknives are made by Boker, and Hen & Rooster are made by Robt Klaas (Kissing Cranes), at least they were last I heard.

After having use a Boker King Kutter for whittling extensively, I suspect that they leave their stockman blades a bit harder than you'd find in a larger fixed blade of the same steel. My old King Kutter still holds a great edge, even though I've sharpened it so often that the large blade is about a third shorter than its original length. The spey and sheepsfoot blades still take a scarey sharp edge.
