Hey guys. Got these done for a friend of the family who lives in my home town of Del Rio, TX. Ever been there? No? You're not missing anything...except maybe the local True Value. Awesome store. Anyway, he demanded carbon steel, because we all know it's BETTER than stainless :) He settled on black g10 handles over wood, for easier maintenance of the handle. Sorry for the poor pics. I was in a rush, as my dad was on his way to pick them up for delivery.

Chef's knife in O-1, 61HRC, .100", rounded spine, .010" 30° edge 1200 mesh (Atoma)
Dedicated protein slicing knife in 15n20, 63HRC, .070", rounded spine, .005" 30° 400 mesh (Atoma)
Paring knife in O-1, 61HRC, .063", .008" 30° 2000JIS (green brick of joy)

Nice set! The lighting makes them look ceramic. Your family friend will be well pleased.
 
Thank you, Mr Aldrich. I use a light box with white filters, it always gives me that ceramic look. 600 grit, then Mother's Mag Aluminum polish....very clean bright satin look to them. Finally got my hand sanding down pretty good.
 
Nice looking knives, I like the handle shapes very comfortable looking.
 
As someone who owns one of Stuart's knives, I can tell you they are sharp. Makes quick work of veggies.

Been to Del Rio once. Made a wrong turn and almost went thru the border crossing with a AR and handgun. That would've been exciting.
 
Thanks Stezann! BFS...that would not have been a fun day, at all. They'll take you to the cleaners for having 22lr ammo, even. God forbid .223 or an actual AR.
