Carbon steels

I've been useing 440C and ATS-34 for my knives.I like these steels just fine but was wanting to experiment with some differant stuff.
I want to try some 1095 or O-1 or others.Would they be good for small(2.5in to 3.5in) general use utility,hunting,and even kitchen knives.What kind of performance can be expected compared to 440C and ATS-34?I know they will rust but I want them to cut and be tough.Thank you.

1095 is a good steel it does rust but if you keep it well oiled while not in use you will
not have any trouble or you could always blue them and seal them with gun oil
or bead blast them,a guy from Boyers Blade
all he uses is 1095 carbon takes and hold a better edge then most stianless also a good
carbon steel is L6 old saw blads are made from see if you can get ahold of them also.
