A Happy Thanksgiving to you ladies and gents.

Getting on toward Carving time for a lot of you. So,

With what will you carve the turkey?
I use my grandfather's carving set, made before stainless steel was invented.

For my "One Year One Knife" project I used my modified Bullnoser by Mineral Mountain Hatchet Works.

It was my first time ever carving a turkey.

It was an ugly baby but birth was given. :D

we did a 17lbs turkey today. i used my 6" dexter russell filet knife to break the bird down (including filleting the breasts off the carcass). i used one of my yanagiba's (around 240mm) to thinly slice all the breast meat for the serving platter.
 
I've been using this Case knife for better then a decade. It's becoming a tradition. I carved the turkey pretty much as shown in the video, maybe not quite as quickly, or as neatly. :D

I don't think he cooked his turkey all the way through. I know ours never comes out of the pan like that yet it is still juicy as can be. My wife's secret is to wrap at least the breasts in bacon.
