I have been wanting to try one of these and was wondering if this is 1095 carbon? If not, is it good knives steel?
 
CV is not actually "carbon steel". The proper name is "alloy steel".

A pure "carbon steel" contains only Iron, Carbon, and Manganese in controlled amounts. If an alloy contains other elements in controlled amounts (that is to say, on purpose rather than as trace contaminants), then it is called "alloy steel".

Case has stated to several questioners that CV contains the same amount of carbon as 1095. It also contains small amounts (less than 1% each) of Chromium and Vanadium. Hence the name CV.

I consider it a good steel for cutlery.
 
I thought it was a modified 1075 steel with added chromium and vanadium. Maybe that's the vintage steel....
 
Get yourself a CV knife in yellow Delrin and see what you think, they are not very expensive if you have the ability to search for things on the Internet. Supposedly the current Case CV is based on 1086 steel with small amounts of chromium and vanadium added.

Most of my daily carry knives are Case CV steel. They seem to be able to cut the things I want to cut.
 
Yeah, I had my doubts because case keep it pretty vague and ambiguous in their literature but since trying it I have to say I like it. It holds an edge reasonably well and it is easy to sharpen. Forms a nice, evan, grainy patina and although I don't think it's as tough as 1095 it's pretty durable. Case uses thinner blades than many other makers and the cv still seems to stand up.

Like Knarfeng said. It's basically (as far as I can tell) 1095 with a bit of chromium and vanadium added in. The two Case knives I carry and use fairly regularly are CV. I love them. The steel takes a great edge, holds it, and is easy to get there. Of course, as with any "carbon" steel, you need to keep it rust free and it will patina if you use it.

Yeah, I like Case's CV too :)
 
All but one of my case knives are CV. Just make sure you keep them well oiled or they will rust.
