Case Xx Alamo Bowie

i have a case xx alamo bowie in stainless- i love this thing it holds a decent edge- fillets well and can chop decently- i have noticed a lot of companies ie bear and son etc offer a stainless and a dascus version of the same knife. which is prefered and why? what did cowboys use?

Why don't you try the traditional knives subforum? There are a lot of very knowledgeable guys there that can tell you a lot about brands like Case and Bear & son.
