So I was looking at my Case sodbuster jr CV yesterday and while looking at the markings on the blade I noticed something. On one side marked USA 3137 CV, and on the other side the CaseXX stamped into the blade but only one X below it, you know the X's that acually mean something.
Why is it that my knife only has one of the factory indication marked X's?

I think it's dating of some sort. Someone might be able to drop by and tell you what yours dates to or you could check out the case website.

I'm looking at my peanut now and it has 2 x's under the "casexx" and one above.

edit: Oh, I reread it and it looks like you already realize that. Are you just confused on what one x dates to?

Well besides the "CaseXX" there is only one other X marked on the blade, and I thought all CaseXX knives would have 2 X's under the brand marking.

Those X's (or dots) under (and above) the tang stamp are a dating system. You subtract the number of X's and dots from the last year of the decade to get the year. For example, if you bought your knife in 2009 and it has only one X, 2010-1X = knife produced in 2009.

Oh I see, well my knife was made in 2009 then. :p

Yes, I believe Case began the decade with 5 of each (X's & dots), and removed one for each calendar year. Down to one X left in 2009.
