I often whip out whatever blade happens to be in my pocket at a particular moment to perform a range of kitchen tasks that I would otherwise deal with using a kitchen knife. As I was about to completely shard two carrots with the Kershaw S30V/G10 that is the current EDC, I decided to split the chore with some other edges.
Objective was to offhandedly determine which blade was offered the least resistance by the carrots in a whittling motion I use to make these shard cuts.
The casual results are best at top and worst at bottom. I realize that some knives are better at this task than others- but that was the whole point.
Top is my 30 year old 5" Chicago Cutlery Walnut Tradition Boner/Utility blade.
The rest you know.

i did a similar test with user blades, general blades vs kitchen blades for a two week period some time ago (sak recruit, military d2, mora clipper, erickson mora 731 5 3/4", and pos gerber utility serrated vs global and other production Japanese knives.

I guess the right tool for the right job wins all the time, as the best knife in the kitchen is one designed for that task. It is amazing how much more efficient a kitchen knife is for that task especially when volume is a concern. That said, I still use the 731 for tacking squash, etc. and other hard tasks that may damage kitchen cutlery. I also use it for other tasks just because it is there and feels good in the hand. Nice slicer!

My mora was in the car at the time. It would have fared better than my kitchen knife!
