change low saber grind into full flat grind?

can I have someone do this? the knife came from the factory with either low saber grind, high saber grind, or full flat. I have the low saber but want to change to high or full flat. is this possible? or will this take away from the thickness of the knife? i don't really want to lose too much steel. thanks, i hope i explained it right.
