Changing an Appleseed

So I have as part of my EDC rotation a Spyderco/Bob Lum folding tanto. I dig this knife. The lock up is great, the finnish is excellent. The materials are top knotch.
My only beef is with the appleseed grind. The penetration ability is great, but truth be told, I don't need to stab things that often. I would much rather make this a flat grind.
Originally, my plan was to use the crap out of the knife. Then I could send it to Spyderco and pay the $4 or whatever to have it sharpened. (I hear that they just change it to a flat grind.) Only problem is, I can sharpen the knife up WAY to easily myself. I can send it from training knife to folding razors blade in a couple of swips on a ceramic rod sharpener.
So how can I go about changing the grind my self? I have a belt grinder and all sorts of stones and devices at my disposal.
