Cheap project knives

I wonder, after reading VT's post about his cheapo Santoku knife; if it would'nt be practical to reprofile cheapo kitchen knives that one finds comfortable to the hand:confused: Say you find a larger Santoku knife with a grip/handle you like, it seems to have decent steel; yet you want a smaller blade, how much hassle would it be to 'cut down' the blade size? Just wondering:D
 
Not much of a hassle so long as you don't ruin the heat treat (if it has one).
Even if it doesn't have a heat treat whatsoever, and is pretty soft, you can reprofile any steel to take a great edge - and with appropriate use, it should last a while.

Try some of the Old Hickory carbon steel kitchen knives.
