Cheese Knife Kit?

I'm looking for any information on suppliers that might offer cheese knife blade and shank that I can make custom handles for. My intent is to make cheese boards as family gifts and equip them with knives having matching wood handles. Thanks for any help.
 
I never know what exactly the guidelines for dealspotting are here and I'd hate to get an infraction, but if you do a google search for "swedish knife knife making" you'll get some promising results.
 
One single cheese knife for both soft and hard cheeses isn't very simple. For soft cheese, you will look for a very narrow blade to avoid dragging. Something like a non-serrated steak knife.
For - very - hard cheese, think a two years old Dutch, a not too thin soft chef knife with some convexity and great food release would be the best. I use a French stainless.
 
Of course you are right, different shapes for different cheeses, and your suggestions will certainly work, but I was hoping to find a matching set as these will become gifts.
