Chef Knives all Sizes and Woods

Here are Most of my latest Chef Knives I am getting ready for the Blade Show.
The top left set needs a Paring and Boning knives. The upper right set needs a Carving knife.
For Perspective. The Longest Carving knife has a 11.5" blade.
The Kyoto Chef knives have around a 8.5" Blade.
The Paring knife has a 3.5" Blade.
Forged from 1084, 5160 and O1 steels.
All are hand sanded to at least 600grit.

Mate they all look like they wouldwork well. Some nice grained handles too. What did you use?

Hi Mitch,
African Blackwood, Kingwood, Honduras, and Cocobolo Rosewoods. The Kingwood is angle cut and shows off the most contrast. The African Blackwood has more the traditional look.
 
What is your table number at Blade? I'd love to check these out.

EDIT: Will you have any of your Misfits with you at Blade?
 
as a heavy prep cook I really love the hight on your chef knives. No knuckle busting there . Thanks for posting.

I will be at a JS testing table. 23PB
I do not have any Misfits. That was a knife that didn't really go with any style I normally made or AKA "MisFit"

Hi Mykel,
I try to get at least 2+" hight on the Chef knives and canter the handle to add a little extra knuckle room.
