I really like the profile and for a home chef its a great length. Professionals usually go for 240 or 270. Chefknives are usually described with the metric system, unless you are Murray Carter and use your own system
Nobody ever seems to mention one of the extras. People , even the non-knife types are impressed. It's entertaining , while you're cutting up the turkey , to listen to the comments -- what kind of knife is that, where did you get that, how did they make that ???
