Chef knives

Hi,

I am an apprentice chef and will soon have to buy some knives of my own. could anyone recommend any particular brands or offer any advice on what to take into consideration and/or look for when choosing a knife.

What do the dudes who teach you use? I was a chef apprentice at the Radisson Hotel and everybody used Forschner/Victorinox. Forget the Henkels and Wusthoff, and Global fancy crap. Get the Forschners and they will last a lifetime. Make sure they have the NSF stamp on them, for use in fodd service establishments otherwise you might not be able to use them.
