I normally use a Spyderco sharperner to sharpen my knives, but I got a Chef's Choice 110 from Edgecraft sitting around that I got for Xmas one year.

What is the consenus on this sharpener?

It's not a great way of sharpening, but it's certainly not the worst powered sharpener out there, any idea on what RPM the motor operates at? If it's too fast, it'll eat up your blade.

I would not go sharpen anything with it unless it's a cheap blade I don't care about, because alot of there sharpeners have quite obtuse angles.

It's good enough for kitchen knives. Western style (as opposed to Japanese) kitchen knives don't need to be hair-popping sharp. As long as the kitchen knife can push cut paper it will work just fine on meats and veggies. Most importantly, it will allow your wife to have a decently sharp edge without having you personally sharpen all of her kitchen knives.

I thought about buying one of these. The thing is is that you will not get the same edge you will from hand sharpening. The angle will be off and it will more than likely go very fast, the edge will just not hold. They are made to sharpen blades very fast and very often. You loose all control over you blade and its angle.
