would the chefs choice 120 model be good for big so called "survival" knives a.k.a. big bowies such as cold steel trail master or rtak II or cold Steel SRK?
would it sharpen a knife to the point where it would bring it from dull to shaving your hair sharp??

are they worth the money? because i have so many knives i use it is rare i have the time to spend a lot of time just to sharpen knives.

Generally those are considered a bad sharpening option and more suited for kitchen knives. Your thicker knives might not even fit in the grooves.

Whatever method you chose for sharpening the fact remains you still must learn the basics of the process. A 1x30 belt sander might be something for you to consider, do a search and you will find a large thread all about it.

I have it and don't recommend it. It is designed for cooking knife, especially for thinner blades.
When to slot thicker blades it doesn't hold the angle effectively and sometimes makes scratches to the blade.
Filing point is invisible and doesn't cover the wide area in slotting corner,
and it is difficult or impossible to sharpen ricasso area of the blade.
Blade sliding is unstable and slip happening frequently, so the edge is not plain-sharpened.
Cutting taste is a bit rough or toothy for cooking, not at good for armhair shaving.
And of course it cannot select angles.

ikuyadas gives you some good reasons not to use it.

you can get a belt sander which will work or if you want another optioin, you can get a set of paper wheels which will work a lot faster and get hair shaving edges quickly. you can also use the slotted wheel after you work up a burr on the belt sander (a convex edge formed on a belt sander for example) to remove the burr and give you a shaving sharp edge. there is a short learning curve but some pick up rather quickly on how to use them. practice on some old knives until you get the hang out of using them. here is a link to a thread i started on them. http://www.bladeforums.com/forums/showthread.php?t=578787 post 710 on page 36 has some good info in it.
