Chef's choice model 120 electric sharpener

I bought one for my wife to use on her Chef's knives. Very easy to use but it can scratch up the blades a bit if you've been drinking too much wine. ;)

It will only accomodate fairly thin blades, but on kitchen knives and the like it is fast and they come out razor sharp. I don't think I'd use it on anything but steak knives.

I used a 110 for years and switched to a 130 a few months ago. It does a nice job on kitchen knives. It's a quick easy way to get a reasonable edge for cutting veggies and meat. On the other hand, really REALLY sharp edges cannot be had as verified not just in performance but also in viewing at 25X magnification. I just ordered an EdgePro Apex 3, and if it sharpens half as well as I think it will I'll have the 130 on ebay next week.

Ok for kitchen knives and older knives. You have to be careful because it's easy to scratch up a blade. Buy a Spyderco Sharpmaker for your good knives.
