Chef's Choice

i read a review for this thing in tactical knives, and they loved it.

they said: "EdgeCraft's Chef's Choice sharpener is so effective, you'll be looking everywhere for knives to feed it."
 
I do not have personal experience with their electrically powered sharpeners. Usually I also tend to take with great distance opinions expressed by some American magazines in taste “Hey, Guys, what a cool knife (sharpener, gun, car, anything else)!!!”

However this one, Model 420, serves me for at least 3 years as both knife sharpening diamond stone and diamond file. There are 3 interchangeable 6-inche long abrasive plates in different grits held with magnet in durable and easy to use plastic handle/base. Being used quite extensively it displays decent durability so far. Very versatile item and greatly cost efficient as well.

I have a chef's choice 110 - it is great for fixed or kitchen knives & good for most pocket knives, I used to use a spyderco sharpmaker on kitchen knives, but this is better & MUCH quicker, I can do an entire drawer of knives in the time it took to do 1 or 2 with the sharpmaker.

It really shines when you need to put a relief grind on a thick blade.

The only weakness I found was that it may scuff the finish of the blade with the guides. - it doesn't always do this, so I don't know if it is the finish or the steel or if it is the blade grind, but I found that if you put a strip of masking tape on the blade sides - no problem.

The three angle bevel really is sharp & keeps the edge for quite a while before it needs to be touched up.
