Chefs choice

Ok i need sum feed back. I searched the name i was looking for but only turned up like 5 results. read them all. They were all part of other threads with very short answers.

Ok Hows the Chefs choice brand? how would you rate it fer folders and fixblades? Will it just dull the knife. Im not to particular about scratches on blades cuz i buy them to use them, not to just look good. Thanks Phil

If you mean the electric ones, they received a good review in Tactical knives some time back. The reviewer used both kitchen and carry knives and was happy with the result, suggested practicing with a couple of " beaters " before anything too nice in order to get the feel of it but they got the job done.

I call them boot heel makers. i.e. after several sharpeneings the heel of the knife will be higher than the rest of the edge. I don't like them at all, but I am a bit of a purist when it comes to sharpening.
