Chicken of the Woods

I harvested a Chicken of the Woods this morning .What a wonderful wild mushroom . Very meaty .These are choice , as good as any mushroom I ever had . Sauteed in olive oil , butter , garlic powder , salt and pepper they were incredible .


 
I wish I were better at identifying mushrooms. Even if I'm 99% sure of something though, I won't take a chance.
 
miltmaldo , thats a Chicken . I cut about half of it off . The outside is tenderer ,

This is the first year I ever had Chanterelles .. They were all over . Thats another choice mushroom that I'll be searching for . I found some fresh ones last week .
 
Very nice pics and interesting mushrooms :thumbup: ! We pick some (mainly Boletus edulis, Cantharellus cibarius and some Russulaceae) but, missing a specific knowledge, we prefer not to pick those "shelf mushrooms". With mushrooms it's good to be careful :) ! Thanks for sharing!
 
Not only did you get a great wild mushroom, but you sautéed it wonderfully in cast iron? You are my kinda cook! :) thanks for sharing dbait.
 
Wow I'm jealous! Haven't been able to find any this year with how dry it's been in my area. Would kill for a nice chicken of the wood or chanterelle right about now. Find alot of morels usually too but not this year.

Cheers, mate... enjoy those, they are some of the finest forages this planet has to offer imo.

With chicken of the woods, there really is nothing else that even resembles them. You find an orange, plate style mushroom on a tree or dead log and it's definitely chicken of the woods. It's the safest edible to identify by far. And they can get HUGE. Only thing that's even close is if it's brown and a little more frilly and delicate, that's hen of the woods and it's edible too (more earthy though)

It's not often you can just find world class ingredients for free in the woods...
 
Nice post, I spent the whole day out yesterday at work looking for some Chicken of The Woods to go with my evening meal, but never spotted any. I wonder if it has been too dry here for them this year.
 
The things I can cook with them.. I go to a Korean market here and buy mushroom all the time. My GF loves some of the dishes..
make a burger for topping cut sweet onion and lots of mushrooms satay with some salt and black pepper . when they are almost done add sour cream. keep cooking till it gets thick. put on top of the burger and its soooo good ..
