Does anyone know the name or names for this kind of knife in Cantonese and/or Mandarin?

Well if I follow what samo said, in Mandarin it would be shiao-chon-wen-dao-tzi, if you wanted just Chinese knife, take away the shiao, otherwise I have no idea.

Do you know if the Shih Lin Ming Dao makers are still in business? They used to make their knife in many sizes with buffalo horn handles?

Maybe I can answer this...
Yes,they are still in business making their knives in many sizes with buffalo horn handles since 1869.

Isstaipei,
Thank you. Glad to hear they are still in business. I used to visit their shop in Shih Lin in the late 1970's. Very nice family.
