chipped cpm 440v knife

hi i have a chipped 440v knife this knife was profesionaly heat treated to Rc55 with a cryogenic treatment it has processed over 150 animals(sheep,goats,deer,etc)it chipped when being used to take the hocks of some goats .the user was my friend who tests all new steels for me i know there was no side ways force applied but there are some deep scratches on the left side of the blade caused by the corner of the diamond stone.the blade is hollow ground .3mm at the edge .3mm at the back of the chip the knife is 1 year old comments would be useful

I've heard of similiar problems with brittleness in 440V blades around RC61 or so. I believe many users of this steel are tempering back to around RC58. RC 55 is rather soft, I don't think hardness would be the cause. Could there have been a very fine stress crack at the break?

0,3 mm at the edge shouldn't be too thin.
