Chisel grind. Emerson and Snody different.

I noticed that the Emerson chisel/single-bevel grind knives’ bevel is opposite from the Snody Boss chisel bevels.

For example :
Emerson bevel is facing down when whittling right handed.

Snody Boss bevel is facing up when whittling right handed.

Who did it right?
Bevel facing up or down when whittling?

It seems like the Emersons are for left handed whittlers 🤷‍♂️

As a carpenter it's important ime to learn to use both hands when using tools (saws, chisels etc..) I'm a lefty and love a chisel ground blade when working wood, wish more makers would make them, you learn to use a chisel grind correctly and it's superior when working wood.

And cutting sushi

Neither. I am not a fan of chisel grinds, period.

Never in 40 years of knife useage have I ever said, "Man, this would sure cut better if it was a chisel grind."
Maybe it works for some folks and more power to them, but I never understood the point of a chisel grind. Less intuitive to sharpen and the knife feels unfinished. I would much prefer a hollow or full flat grind.

Knife in right hand cutting the fish, which way is the grind ? Honest question, i do no eat fish let alone a dead uncooked one
Grind should be on the right, the flat side should be against what you are cutting. This way you can make nice thin perfectly straight cuts. Or, alternatively, when filleting eels, held with the flat side down.....google edosaki or unagisaki......

Draw cutting with chisel grind (granted it’s true zero on flat side) is awesome. But yeah, that’s pretty much it: craft knife kind of thing.

always thought emerson did his that side for pictures in promos setup......ive never found any of my emersons to be great slicers. I use both hands to cut so when I have one of his I use my left hand and it's better than in my right hand but not great. don't own a snody, but I prefer a right hand chisel.

I have a Charlie Mike (R.I.P.) fixed blade with right hand chisel and it's thin stock setup with good geometry and cuts really well. I've retired it since we lost Matt.

Ditch the chisel, Emerson makes a very grind that's IN MY HUMBLE OPINION better than any chisel grind they ever had. (I know it's sacrilegious to say that, but they really are fantastic!)

I'd seen a quote from him on it that basically stated it was ground on that side for looks, not function. I do have several Emersons and love the ergos, but the grinds are ... not ideal.
