Christmas cooking - yes this is 'heat treating' !! I just found out that IG is going to screw up the bacalhau with HT relish !!! .... Here's a good way to prepare bacala [dried codfish] that I developed. Soak the codfish in cold water for 24 hours , changing the water about every 4 hours.Cut it into 1 1/2" chunks. Coarsely chop onion ,chop garlic ,chop parsely,coarsely chop red pepper . Saute the onion and garlic in olive oil and butter till translucent .Add the other ingredients and cook briefly till the fish is done ,salt and pepper to taste. Serve with polenta [corn meal] and enjoy !! This is more of a Portuguese/Spanish way.

I must be hungry. That sounds pretty tasty and I usually hate fish unless it's deep-fried (i.e.: mostly crispy batter).
 
I have to say this sounds tasty but one thing bothers me -- Is this the same kind of fish you can smell about 1/2 mile down wind when some Norsemen get their hands on it and do what ever they do to it:D
 
Mete as an aside When my kids were small and we had no cable or antenne
reception they watched a potload of VHS tapes DangerMouse :thumbup: was one of their favorites. I may still have a few on episodes on tape.
 
Pete, you're thinking of lutefisk .If I told you how they made it you wouldn't eat it !! The bacala recipe takes dried ,salted cod and makes it just like fresh cod.....Tommegow, Dangermouse is my hero.They are reshowing those programs [25 years old] in UK and I hope they come back here too.
 
What's wrong with lutefisk? my wife's uncle has 25 pounds reserved at the local store for the holiday meals. the local Mason's also have a community Lutefisk dinner planned which uses in excess of 300 pounds.:confused:

Mete, sounds good for a main land Portuguese's recipe.:barf: But the Azores Bacalhau has more flavor. :D
 
For those who want to learn about lutefisk , just google ,lots of info and humour. IG, I wonder if the HT Relish does the same thing to codfish as lye ??
