I've basically decided on either the Kershaw Shun Classic's or the Al-MAr Ultra Chef's. I really like the handle on the Kershaw, it was very comfortable for me when I was handling it at a local shop. No stores carry Al-Mar locally, so if I choose them, it is sight unseen. What would you all choose out of these two?

We mostly have Henckel and Wusthof, but I did buy a Shun paring knife last year. If I was ever to start over with our kitchen knives (not likely at this late stage) they would all be the Shun. Incredible edge and a very ergonomic handle.

I have never seen the Al Mar knives, but that was because I've always purchased our kitchen knives from Culinary type stores.

I'M DREAMING OF A...
Kershaw/Shun Ken Onion Chef's Knife...
among the present alternatives, I think the Shun would still get the most votes.
best, t.

I went ahead with the Shun's. I got a 7" Santoku (Sp?) an 8" chef, a 3" paring, the warncliff style vegetable knife, and the bread knife. I'm extremely impressed/pleased with all of them, sharpest knives I've owned.
