Which is easier to resharpen and holds an edge better? Which one takes a finer edge? and chrome vandium has been called "the old carbon steel" will it burr when sharpening like 1095 High Carbon?

CV seems a bit easier to sharpen to me. Someone once described Case's SS as feeling "gummy" on a whetstone, which makes sense. The CV has a crisper feeling when sharpening and doesn't burr as much. Sometimes you'll get large burrs with the Tru-Sharp that are difficult to remove.

I don't notice much a difference in the overall obtainable sharpness or edge holding. You might spend a little more time with the SS, but it seems to get just as sharp as the CV. I often swap between carrying stainless and carbon steel versions of the same model and I don't see a difference in edge holding, but my slip-joints only get used for pretty light duty stuff, so YMMV.

In side by side manila rope cutting tests of Case CV and Case Tru-sharp I found that the Case CV held an edge a bit better. Enough so that I would expect to see the difference in everyday use.

I felt that the CV was a tad easier to sharpen, though the Tru-Sharp is extremely easy.

I didn't really notice a difference in the final sharpness between the two steels.
