Cleaning and tuning a Swiss Army Knife

I've offered to loosen up the stiff action on a friend's SAK. It also needs to be thoroughly cleaned. I'm guessing that soaking it in Breakfree would work, but this knife needs to be foodsafe. What's a good way to do this?
 
I run my SAKs under hot water, dish detergent and blast it all out with compressed air. A tiny bit of high grade mineral oil will be enough lubrication for it and still be food safe.

I carry a Soldier daily that does nothing but cut food. It's been in my pocket every day for three years and this cleaning treatment has worked just fine.
 
If it's really dirty, you can soak it in a container with some warm water and dish soap for a while, then rinse and dry. Mineral oil will work as a lubricant, but use it sparingly, and wipe off the excess.
