Clear epoxy or casting resin?

I've got to inlay a couple of medallions on a knife handle, and to make the handle shape right I was thinking I would inlay them deep and put them under clear epoxy or resin so that they couldn't be felt in the handle.

Any recommendations on what kind of glue/resin to use? I'm not big on casting, synthetics, etc... don't need the "best" one that only comes in quarts or gallons or whatever lol.
