I'm considering having a cleaver made for me. Assuming all things equal in terms of quality heat treat, geometry, etc., would there be an advantage to 3V over high carbon?
3V will have better much better edge stability and edge retention. The corrosion resistance is much better too. You might find sharpening takes a bit longer with steels that have vanadium carbide (like 3V).
For a cleaver, I would personally go with Z-Tuff, CPM 3V, CPM Cru-wear, or Z-Wear.
