Picked this today at a Thrift. Chicago Cutlery cleaver. Full tang, 3 rivet,
walnut handle. Stainless... (they use to be carbon steel...been around
since the 30's) . I gave $2. It took a nice edge. Has a 5" blade. Hard to
discern a temper line. Pretty cool cleaver for spatchcocking chicken.
The hardness of the steel has its detractors but for non-Pro kitchen
use I think it will pass muster. I have a nice Sabatier and haven't decided
if this one gets moved on or will reside in the RV.
