Cleaver pick....

Picked this today at a Thrift. Chicago Cutlery cleaver. Full tang, 3 rivet,
walnut handle. Stainless... (they use to be carbon steel...been around
since the 30's) . I gave $2. It took a nice edge. Has a 5" blade. Hard to
discern a temper line. Pretty cool cleaver for spatchcocking chicken.

The hardness of the steel has its detractors but for non-Pro kitchen
use I think it will pass muster. I have a nice Sabatier and haven't decided
if this one gets moved on or will reside in the RV.

CC made 3 cleavers in the heyday, the MC-1 which sounds like what you have a 5" small cleaver. There was the PC-1 which stood for professional cleaver and was large about 8" long and carbon steel, Lastly was the CC-1 which was a Chinese cleaver.

The MC-1 would be great for the RV kitchen.
 
Excellent info Spidey. Thank you. I read on this site that this cleaver probably dates
to sometime after late 60's early 70's.... does that sound correct ? In looking on the
net it seems the larger Pro PC-1 is much more abundant than the smaller MC-1.

Mine does not seem to have spent much time in the dishwasher.... to the RV it will
travel.

(all I've used on the edge is a honing rod.... took a couple of burrs out... nice and
straight...and sharp ).

I have an old "Walnut Tradition" insert at home and will look. CC had been started for the meat cutting industry only, then in 1969 started selling to the home market according to internet searching.

Info on old American knife companies is sketchy.
 
Thanks Spidey.... I agree , lots of mis/dis information out there. Those inserts / catalogs are great to have
in the library . I know that back in the 60's my folks managed to get hold of some stray pieces of Chicago
Cutlery .... had them for years and years. As I recall , was the carbon steel stuff. Thanks again.

Not seeing it on my, shall we say uniquely organized desk. I know it is around and will run across it again.
 
After action report: Mini cleaver performed admirably on all Thanksgiving chores. A good
chopper / dicer / and adequate slicer (I need to work the edge a bit finer... but it could
have been operator error...I have a nice set of Henckel Professional S series slicers).
I smoked a Duck and roasted a Turkey.... the cleaver is a keeper. Pick one up if you find
it at the your correct price point.

Bride still reaches for the Sabatier first but that may be just habit.
