I have been looking for a high quality Chinese cleaver. I bought a returned the J.A. Henckels 8" Chinese cleaver. I was very disappointed in the quality of the blade. I have searched the Internet and several local stores and have had no luck. Can anyone suggest a manufacturer that I may have over looked? I would rather not go custom.

Thanks

Astro,

The Joyce Chen company makes a decent knife to my knowledge, not a real upper end madel by any means but a little better than most of what you see in the Chinese style.

Both Messermeister and Global make a excellent quality cleaver also. Messermeister markets four knives that are endorsed by Martin Yan that are very nice and one of those is a traditional Chinese style cleaver that feels very nice in the hand. Global has several different models of cleaver if I remember correctly.

The above site carries both brands plus several others, one of them may be what you want. They are a goo, reputable company that specalizes in kitchen cutlery.

Good luck.

Take care.

Astro, I have a couple cleavers left that I forged out of 3/8" high carbon steel, check out my web site, and let me know if your interested.
