There are a couple. Are you asking because you want one made or because you want to make them yourself using a mill or machine center?
For the record I don't believe the two guys I am aware of that machine knives do custom orders. If that is what you are looking for someone else may know of a maker and the two guys I'm referring to post on here occasionally.
I'm not a machinist but I do know that a CAD drawing alone is not enough to make a knife with CNC. Tool selection, feed rates, paths, etc are needed to machine a knife. However any custom maker worth his salt could use a CAD drawing as a blueprint to make knife. In fact many of us with no machining experience start with CAD or similar program to design the knife then print it out to use as a template.
Yeah, I've read that CAD drawings alone aren't enough to machine something, but I haven't the experience to offer more data. I am looking to have something made that is totally custom and unique, so if anyone could help me out (for a fare price), I would be grateful.
Hopefully someone who actually CNC machines knees will chime in, but up front I can tell you that it's going to be extremely expensive if you choose to go this route. There are nearly no advantages to having a single knife made via CNC.
I have a CNC at home that I made. Have made a knife with it too. Not too shabby a way to go for stock removal. Cutting out a blank is a cakewalk, the grind on the other hand... that takes time. If you are looking to have the part cut I can do that easy enough on the cheap.
