Coating on Carbon Steel Knife

I have a couple of carbon steel knive that have a Black textured coating on them, I assume to prevent rust. But the coating is actually a nusance, as it holds organic material from cutting through sticks, plant stalks etc.... So I have taken it to where there is a smooth surface with just some sand paper but is there a better method to remove the material or is there any reason it should not be removed further.
One knife is a Ka-Bar and the other a Becker if you interested.

Hiya bro, this is my Ka-Bar after some work with Heavy Duty stripper and some sandpaper !!!

What was you heavy duty stripper. I am not so concerned about getting a bright finish I just want to get rid of the coating.
