Cocobolo wood vs Quincewood?

Personally, Quincewood. Reason being that you can get some really great grain in that wood and I've never been all that impressed with cocobolo- way too many of those Booo-eys being sold on the tee-vee with that wood.

Quince wood, only because it's less common. I like cocobolo (I just bought the Lone Wolf T-2 Cocobolo), but you see it in lots of places now.
 
Cocobolo is very hard and dense and can have excellent colour and grain.

Chinese quince has great colour and grain, but is no where near as hard as cocobolo. When used for knife handles it is generally stabilized.
 
Cocobolo is pretty and robust.

Quince wood is pretty, but I wouldn’t want it unless it had been stabilized.
 
I would only get a stabilized wood handle anyway, so I would have to say the quincewood, it's purty...
