Welcome to Bladeforums.
I don't truck much with Cold Steel, but I do own a few. Four to be precise: Master Hunter, Pendleton Hunter, Pendleton Mini-Hunter, and the CS stockman slipjoint.
The Master Hunter (in Carbon V) is by far my favorite, mainly because of the steel, but I do appreciate the design of the Pendleton Hunter. It has great ergonomics in my opinion, and it really is a perfectly sized blade for field dressing. The more I've hunted, the more I've realized over the years that you don't need a huge blade to dress a deer. Three to four inches is plenty, and you can get by with less.
I see now that the Pendleton comes in VG-1 (?), but I think my blade is AUS-8 if I remember right. It takes a nice edge and has been easy to sharpen. No real complaints there.
The Pendleton Mini-Hunter is tiny, moreso than it looks on the CS page in my opinion.
http://www.coldsteel.com/pehu.html I laughed when I first saw mine (I bought the two Pendletons together), and the smaller knife was quickly relegated to a camp box for food prep. Sort of a "tactical" paring knife.

I am now saving it for my son for a camp blade when he gets a little older.
You can see the bigger Pendleton here next to some other hunting knives, including the CS Master Hunter.
Hope that helps.
