I am given to understand that they might be edited together out of sequence, and presumably they'll sharpen knives if they stop cutting, but what they actually do with the knives is legit.

Yes, the tests are legit.

We film the tests in one extended shoot - 16-18 hour days, 8 day shoot - and we film them by feat.
For example, we do all of the meat cutting on the same day, all of the rope the next day etc.
It's simply the most efficient way to film the testing of such a vast amount of products

We do the spine whacks and over-strikes on the last day - as we remove the edge and point from the blades for user safety, so the tests are not always shown in sequential order.
The feats and tests shown are 100% real.

We use out-of-the-box blades for all of our knife and sword tests. Some of the machetes are sharpened.
The same knives are used throughout for every test, though we did switch out once or twice to sneak in a prototype as a little easter egg for eagle eyed fans.

We replicate these tests live at shows and events and we are always happy to back up our claims with proof
Fake is just not our style :D
 
I'm not sure how they could possibly NOT be legitimate. Well, I'll say that it would be fairly easy for a lot of folks to tell where they were edited, or where the cutting targets had been pre-cut or whatever. If you watch frame by frame, you can see the blades shearing through the ropes and meat that they're cutting. Looks pretty real to me.
