So I just got some stones and a DMT guide and have been practicing (with pretty good results) on my 8cr13mov kershaw. Tools my dad about it and he asked me to work on his pocket knife which he has had for a while. I wanted to do some research on the blade to make sure I was going to do it right (right angle for the steel etc.), but can't find any info on it. The blade is marked Cold Steel San Mai (with three horizontal lines) and also has Hoffritz on another pary of the blade. All I know is he has had it forever and says it was expensive. Does anyone have any idea what steel I'm looking at or any knowledge of this knife?

It's probably a Cold Steel Clip Mate, with a San Mai III (hence the three lines) blade. The blade is made from VG-1, sandwiched between layers of something tougher like 420 or similar. You'll find VG-1 very easy to sharpen, it takes a nice polish.
