I've picked up a number of new folders and thought I might post some pics.

Right now I'm leaning towards collecting 'grandpa's gentleman's knives', ie, handles must be natural materials, plain edge blade, and preferably no logos or writing on the blade. Slipjoints, lockbacks, and tastefully concealed locking mechanisms are welcome.

Any ideas?

Nice collection, Kazeryu.

Here are some suggestions:

Bulldog slipjoints, stag handled, carbon steel.
German Eye stag handled slipjoints in carbon steel.
Hen & Rooster stag or bone handled slipjoints in carbon or stainless steel.
Henckel slipjoints (bone + stainless).
Queen slipjoints (ATS34 or 420HC, stag, bone, or cocobolo - now discontinued and replaced by the soon to introduced birdseye maple).
Schatt & Morgan (made by Queen): ATS34 or 420HC, stag or bone.
Case slipjoints in CV: preferably to be handpicked.

You should consider picking up a Bruckmann knife. Vintage German quality, common and affordable on eBay even for mint knives, and many have natural handles.

I've seen vintage knives from Case, Schrade, and others were made with a level of workmanship rare today.
