Comercial Dewar

What do you mean by a "commercial Dewar"? Do you mean the 100 liter shiny stainless tanks with the valving on top? Those'll last months, though they're still vented.

If, on the other hand, you mean the semen storage laboratory variety like most everyone buys, those have a "closed evaporation rate" of about 75 mL/day on a quality unit. That is manufacturers' claim. Your mileage will vary. People get about 3-6 months out of most of 'em if secondary insulation is used (build a box around it and insulate).
 
Depending on the amount of steel put in it, I get 3 1/2 to 5 1/2 months with my 20 liter dewar. That is without any additional insulation.

General question - what do you do when the level gets low enough you can't cover a blade in it?

Do you carry the whole thing with a few cups of nitrogen in the bottom for a refill, or dump out the balance and fill the dewar fresh?

The lower the level the quicker it evaporates. After getting that low it goes rather quickly. I've never had to carry any back but I would rather than poor it out. It won't spoil.
