Can anyone explain the performace variances between forged steels and ats-34 for example?

Is it fair to lump the common forged steels in one category for comparison?

I am trying to understand which steel might make the best hunting knife.

If you're the kind of guy that takes care of his stuff, then carbon steel is great if it's made by someone who knows what they're doing.
If you 'ride it hard and put it away wet', then 'stainless' is a good choice. My favorites are ATS 34, BG42, 154CM- high in carbon, chromium and molybdenum.
 
I have used ats-34 for years and understand its benefits.

Forged blades have become so popular that I am wondering what all the fuss is about.
